Aloo Sabzi has various variations in India. Aloo Sabzi is something which can be eaten with Puri, paratha or Chapati in Breakfast. It can also be eaten for lunch or dinner. It is the most versatile Indian dishes and also has the , maximum number of variations. This recipe is a basic Bengali Aloo Sabzi made with a special Bengali spice mix know as 5 Phoron.

Steps

  1. In a wok heat the oil.
  2. Add the Bengali spice mixture and sauté for a minute. Make sure not to burn them.
  3. Add the dried fenugreek leaves and ginger paste. Sauté for another minute.
  4. To this add the turmeric powder, sugar, red chilli powder and salt. Sprinkle a little water to prevent it from sticking to the bottom of the wok. Sauté for 2 minutes.
  5. Add the boiled potatoes and mix well.
  6. Dissolve the tamarind pull in ½ cup water and add it to the potatoes. Mix everything well and cook till it reaches the boiling point.
  7. Mash some of the potatoes to get a thick gravy. Cook for another 3-4 minutes . Add a little water to bring it to your desired consistency
  8. Serve hot.

Serving Instructions

Serve it hot with Puri or paratha
