Pointed gourd (Potol in Bengali/Oriya, Parwal in Hindi) is a vegetable which is very easily available in East & North India. Hence Bengalis and Oriyas have a variety of recipes with this vegetable. This is an Oriya recipe which uses pointed gourd and tomatoes as the main ingredient.

Steps

  1. In a non-stick wok heat two tablespoon of oil. Add half the cut pointed gourd and fry till they are golden brown on both side. Remove and keep aside.
  2. Add 2 tablespoon oil and fry the remaining pointed gourds.
  3. Add the remaining oil. To this add the cardamom, clove, cinnamon, bay leaf and dried red chili.
  4. Sauté till aromatic and add the onions. Fry till they are soft pink in color and add the ginger paste.
  5. Fry for another minute and ad the coriander, turmeric, cumin, red chili and salt. Sauté for a minute and then add the tomatoes.
  6. Cook till the tomatoes are all mushy and mixture come together.
  7. Add the fried pointed ground and sprinkle the garam masala.
  8. Mix well and serve hot.

Serving Instructions

Serve with hot buttered phulkas
