Egg Masala (Kerala style)

Eggs tossed with onion, tomatoes and south Indian spice mixture.

Egg Masala or also popularly known as Egg roast is a famous Kerala specialty. A thick spice mixture is made and the eggs are tossed in it. The addition of shredded coconut and tempered curry leaves makes all the difference.

Steps

  1. In a non stick wok heat 1 tbsp oil. Fry the eggs till lightly brow. Remove and keep aside.
  2. In the same wok add the remaining oil and heat it. Add the mustard seeds and fennel seeds. Sauté till it crackles.
  3. To this add the onions, green chili and curry leaves. Fry till the onions are soft and translucent.
  4. Add the ginger garlic paste and sauté for another 2 minutes.
  5. To this add the coriander powder, cumin powder, red chili powder and salt. Sauté for a minute and add the tomatoes. Add a splash of water and mix well.
  6. Cook till the tomatoes are soft and mushy. Add the shredded coconut and tamarind paste. Mix well. Adjust the salt.
  7. Add the boiled eggs and toss it lightly.
  8. Serve hot with appams

Serving Instructions

Serve it hot with appam, dosa or roti.
