Tindora is known all over India with different names. It is also known as Kundru, Dondakaya , kovakkai etc. It is easy to prepare vegetarian dish. If you have little tindora at home, you can add potatoes or tomato to increase its volume. It is a spicy and little crunchy curry which goes well with phulka and rice.

Steps

  1. Cut the Tindora into thin long slices
  2. Heat oil in a pan.
  3. Once the oil is ready add the Jeera and Mustard seeds. Once the mustard seeds starts crackling add garlic and chopped onion. Cook it until the onion are translucent in color. It may take 2-3 mins on the medium flame.
  4. Now add turmeric pwd, red chilli pwd and salt and give it a stir.
  5. Then add the tindora and mix it well for about a min . Cover it with a lid and cook it for 15 – 20 mins on a medium flame mixing in between to avoid sticking it to the bottom of the pan. Make sure that the tindora are cooked properly.
  6. Empty it in a serving dish.

Serving Instructions

Serve it with Phulka or Rice.
