Dum Paneer is a traditional Indian recipe made with cottage cheese and yogurt and cashew nuts to make a thick white gravy. Dum is a s style of cooking in which the preparation is sealed in a pot and cooked  in its own steam.

Steps

  1. In a wok heat the oil
  2. Add the whole cardamom, bay leaves, cloves and crushed peppercorns.
  3. To this add the ginger garlic paste and saute for a few seconds
  4. Add the onion, cashew and green chilli paste. Fry for 3 minutes
  5. Add ½ cup water and bring it to a boil
  6. Add the cumin powder, coriander powder, salt and fry for about 5 minutes.
  7. Reduce the heat and add the yoghurt. Mix it well
  8. Add some more water to bring to desired consistency and add the paneer.
  9. Reduce the heat and cook the paneer covered for about 3 minutes.
  10. To this add the fresh cream and mix well. Make sure to keep the heat reduced.
  11. Mix in the cardamom powder and garam masala. Also add the fresh chopped coriander leaves.
  12. Give it a stir and transfer it to an over proof pot. Sprinkle the rose water and screw pine water. Cover and seal it with a dough made of whole wheat flour or any flour. Make sure the lid is sealed tightly so that the steam cannot escape
  13. Preheat the oven to 180 degree centigrade and bake for 15 minutes.
  14. Serve hot

Serving Instructions

Serve it with hot Naan or Kulchas
