This is a famous Bengali recipe. The stuffing has many variations ranging from vegetarian to non vegetarian. In this recipe , the stuffing is of cottage cheese but fish, prawn, chicken mince can also be substituted to make it wholesome.
Potoler Dolma Ingredients
Cut one end of the gourd ans scoop out the inside of it with the help of the back of a spoon.
Heat oil in a wok and fry the gourds till lightly brown on each side. Remove and keep aside.
In another wok add 2 tbsp oil
Add the onion paste and fry till golden brown in colour.
To this add the ginger garlic paste. Sauté for a minute.
Add the red chilli powder, garam masala, turmeric powder, broken cashew nuts, cumin seed powder, dried mango powder and salt as mentioned under stuffing.
Fry for a minute and add the grated cottage cheese.
Mix well. Remove and keep aside.
Take this mixture and stuff the gourds with it.
For the gravy heat 5 tbsp oil in a wok.
Add the bay leaves, sugar and dried red chilli. Sauté till the sugar caramelizes.
Add the onion paste and fry till its golden brown in color. This will take 6-7 minutes.
To this add the ginger garlic paste and sauté for another minute.
Add the red chilli powder, turmeric powder, cumin powder, coriander powder salt and fry till oil separates.
Add the grated tomato and again cook till oil separates and the mixture is free of moisture.
Add the garam masala powder and mix well.
Add ¼ cup water and mix. Add the stuffed gourd and mix well.
