Ridge gourd is one of the low fat vegetables and very good for health. Now I am preparing Beerakaya Tomato, this recipe is a every day Andhra style vegetarian curry. Simple to make and tasty. It goes well with rice or chapati.
Beerakaya Tomato Ingredients
Heat oil in a kadai and add mustard seeds and cumin seeds, let them splutter for a minute.
Add curry leaves, red chili, onion, garlic and fry them until the onion becomes soft and tender.
Then add ridge gourd, salt, turmeric powder and mix well, cover the lid and cook for 10 mins.
Now add tomatoes, red chili powder, coriander powder and sufficient water, mix well and cover the lid and cook for 15 more mins in medium heat.
