Kadhi is loved by all generations. Normally, it takes long time to cook but in this recipe, kadhi can be prepared in an instant way. This recipe is good for young generation and working people who love kadhi and want to prepare it quickly.In this recipe, I have replaced pakoras with vegetables, since making pakodas take a lot of time. And also addition of vegetables make it a healthy option.

Steps

  1. 1. Dry roast the besan on nonstick pan for 3 minutes only till it changes the colour. Then keep it aside. Note: Besan should not turn brown in coolour, roast it slowly on low heat.
  2. 2. Divide the buttermilk in 2 portions. It should not be too diluted.
  3. 3. Take a nonstick pan and saute the diced vegetables for 5 minutes. Then add a pinch of salt and mix it. Then keep it aside.
  4. 4. In one portion of buttermilk, add roasted besan and mix properly with fork.
  5. 5. Heat oil in the wok, and add methi dana, cumin seeds. Then after 1 minute, add crushed ginger and garlic . Then add hing, turmeric powder, red chilli powder, green chillies and mix well.
  6. 6. Now add the buttermilk mentioned in step 4. Stir well for 5 minutes. Then add the other portion of buttermilk and stir it on a low heat. If you feel it is thick, add some diluted buttermilk or even water will work.
  7. 7. Then add salt according to your taste, kasoori methi, already cooked vegetables. Let it cook slowly for 5 minutes and then remove it from fire.
  8. 8. Finally, add garam masala & coriander leaves. Cover it for some time before serving.

Serving Instructions

Instant Kadhi goes well with rice.
