Malai Kofta is a Punjabi gravy dish made with grated cottage cheese and potato. This is rich and spicy and is loaded with fresh cream as the name suggests. Mali Kofta is something which is prepared for occasions or when you are expecting guests.
Malai Kofta Ingredients
In a large bowl, mix the grated cottage cheese, grated boiled potato, red chilli powder, ginger garlic paste, plain flour, minced green chilli, baking powder and salt.
Form a dough and divide it to15 small balls. Keep aside.
Heat oil in a wok for frying till it reaches smoking point. Fry the kofta till golden brown in colour.
Remove and keep aside.
In the meantime puree the onion, dried red chilli, green chilli and cashew nut.
In a wok heat 4 tbsp oil. Add the cumin seeds , clove and cinnamon.
Sauté till aromatic.
Add the onion paste mixture. Fry till it leaves the side of the pan. This will take about 5 minutes.
To this add the ginger garlic paste and fry for another minute.
Add the red chilli powder, Kasuri Methi, coriander powder, turmeric powder, black pepper and salt. Fry till oil separates from the mixture.
Add the tomato puree and fry on low heat for 10 minutes or till the tomato is cooked.
Slowly pour in milk along with an equal amount of water.
Heat on a high flame till it reaches boiling point. Reduce the heat and add the fried kofta. Simmer for 5minutes.
