Main Ingredients Besan, Curd

Punjabi Kadhi is an authentic dish of North India made with Besan (Gram flour) which is a staple ingredient in a variety of cuisines. Besan in rich in carbohydrates and proteins. This dish is one of the favourite food of North Indians. The real taste comes when served with rice.

For Pakora

  • 1 bowl besan
  • 1 onion finely chopped
  • 6 chopped curry leaves
  • 1 chopped green chilly
  • ½ tsp turmeric powder
  • ½ tsp red chilly powder
  • ½ tsp chat masala
  • oil for frying
  • salt to taste

Steps

  1. For Pakoras, mix besan with water to make a smooth thick batter.
  2. Add chopped onions and chopped curry leaves and chopped green chilly to this batter.
  3. Now add salt, red chilly powder, turmeric powder and chat masala to mixture.
  4. Heat oil in a wok. Make pakoras with the help of spoon or by wet hand one by one. Pakoras are ready for the kadhi.
  5. For Kadhi put oil in a wok. Add asafoetida and methidana to oil. Now add chopped garlic. Sauté till garlic turns golden brown.
  6. Add chopped onions and curry leaves to the oil and fry for 2-3 minutes.
  7. Put rest of dry masalas and salt to it.
  8. Now add besan to curd and blend it well to make a smooth paste, add about 2-3 cups of water to make the mixture more dilute.
  9. Pour this besan and curd mixture in the wok and boil it properly. Let the Kadhi cook for about 20 minutes.
  10. Add pakoras to Kadhi and cook it for another 10 minutes.
  11. Put a pinch of red chilly powder in 1 tsp. of oil and give this tempering on Kadhi. Delicious hot kadhi is ready to serve.

Serving Instructions

Serve hot with Rice
