Sambhar is a very popular and traditional South Indian lentil soup with variety of vegetables. It is known for its spicy and tangy taste. South Indian meal is incomplete without Sambhar.

  • 1 cup toor (arhar) dal
  • 4 shallots or 2 medium sized onions chopped
  • salt to taste
  • ½ cup vegetables washed and chopped( carrot and beans)
  • 1 medium sized tomatoes chopped
  • 2 tbsp sambhar powder
  • 1/2 tsp turmeric( haldi) powder
  • 1 tsp mustard seeds
  • 1/4 tsp fenugreek seeds
  • a few sprigs of curry leaves
  • 2 tbsp oil

Steps

  1. Wash the dal thoroughly and boil it in pressure cooker till half cooked for 2-3 whistles.
  2. Open the lid and blend the dal with a blender or just mash it.
  3. Now add the chopped vegetables except tomatoes and onions in the pressure cooker containing the dal and cook till one whistle. Ensure that vegetables are not overcooked. You can use vegetables of your choice like brinjal (eggplant), pumpkin, drumsticks, zucchini etc.
  4. Now open the lid and add tomatoes. Add turmeric powder and sambhar powder to the dal and vegetables mixture. Also add the tamarind paste and salt. Adjust consistency by adding water as required Simmer for 10 minutes
  5. In a skillet, heat oil. Add mustard seeds and fenugreek seeds. When it starts crackling, add curry leaves. Sauté for 1 minute. Now add onions and fry till they are light brown. Add this mixture in the hot sambhar. Immediately cover the cooker with its lid, so that the aroma and flavors from the tempering mixture gets infused with the sambhar.

Serving Instructions

Serve hot with rice, idli , dosa, vada or appams.
