Vegetable Dum Biryani is a all time favorite rice based dish for all ages. In this recipe I am using potatoes, cauliflower, carrot and tomato. You can also use any other kind of vegetables. In this recipe vegetables are cooked in pressure or dum, it is very tasty and healthy.

Steps

  1. For marination take a bowl and put carrot, cauliflower, potato, tomato, biryani masala. lemon juice, curd, salt, tomato,green chilies and mix well, keep it aside for 1/2 an hour.
  2. Now heat oil and butter in a pan and add onions into the pan, fry them until the onions becomes golden brown color. Now in the same pan add the marinated vegetables and mix well.
  3. Fry them until the vegetables are half cook. Mean while boil the rice for dum biryani. For that boil 6 cups of water with all spices, salt and little oil. When the water is boiling add soaked rice and cook until the rice is 70 percent cooked because they will be pressurized later.
  4. Drain the rice with the help of drainer and keep aside.
  5. Ttake heavy bottom utensil, and add 1 tsp of oil or ghee and spread it to the bottom of the bowl. Now layer the half of the rice on bottom, next layer the prepared vegetables on top of the rice. And finally layer the rest of the rice on top of the vegetables.
  6. I am adding food colours for my biryani with milk. It is optional, you can also skip adding colors. In the place of color add turmeric powder.
  7. Add little melted butter on top of the rice, and cover the air tight lid and dum it for 25 mins in medium heat.
  8. Finally open the lid and mix well and serve hot.

Serving Instructions

You can serve this with raita or any gravy curry.
