Rassa is a Maharashtra preparation. Rassa is a spicy preparation originated in Kolhapur. It’s a famous Maharashtra egg preparation which is eaten with chapatis or plain rice. Maharashtra cuisine mainly includes lots of spices and flavors. This egg rassa has distinct flavors and is really spicy.

Steps

  1. In a wok, heat 2 tbsp oil.
  2. Add the fennel seeds, cloves, sesame seeds, poppy seeds and peppercorns. Sauté till aromatic. Make sure the sesame seeds and poppy seeds do not burn. Sauté them on a low to medium heat.
  3. Then add onions and fry till light golden brown in colour. This will take about 5 minutes.
  4. Once they are nicely done, add the ginger, lightly crushed whole garlic cloves and the dry red chillies. Fry for about 3-4 minutes. Turn off the heat and blend all the ingredients into a smooth paste.
  5. In another wok heat the remaining 2 tbsp oil. Add the onion and spice paste. Fry for five minutes and add the tomatoes.
  6. Cook the tomatoes on a low heat covered for about 5 minutes or till they are soft and mushy.
  7. Add the turmeric powder, salt and sugar. Add a little water and mix well. Add the sliced eggs and cover and cook for 2-3 minutes.
  8. Serve hot.

Serving Instructions

Serve it hot with traditional phulkas or rice.
