Pioneer tava masala is a Punjabi dish that is loaded with spices and is delicious. The final touch of cream imparts smoother texture to the gravy.  It's quick and easy and can be made with simple spices. While sautéing the whole spice if you can flambé it to impart the roasted smell to the dish just like in restaurants.

Steps

  1. In a large bowl add the paneer.
  2. To this sprinkle the dried fenugreek leaves, red chilli powder, turmeric powder, chat masala and salt. Lightly toss till every cube of paneer is coated. Let it sit for 10 minutes.
  3. In a wok heat oil and shallow fry the banner pieces till each side is light golden brown in colour.
  4. Remove and keep aside.
  5. In the remaining oil add the cumin seeds, carom seeds, green chillies and caraway seeds. sauté for a minute on low flame.
  6. Add the chopped onions and fry till light golden brown in colour.
  7. Add the garlic paste and fry for another minute or two.
  8. Add the tomato puree and coriander powder along with salt.
  9. Cook till water is drained out and oil separates from the mixture.
  10. Add the fried paneer pieces and toss till its coated.
  11. Sprinkle ¼ cup water and let it cook.
  12. Add the garam masala powder. Mix well and add the fresh cream
  13. Mix well and let it cook till it reaches the desired consistency.
  14. Adjust salt and serve hot.

Serving Instructions

Serve it hot with jeera rice or paratha
